On days when there’s leftover rice in the fridge and not much time or energy to cook something fancy, egg onion rice is what I turn to.

I remember making this often on busy afternoons, when the kitchen feels warm and quiet, and you just want something filling without too many steps. The smell of onions slowly caramelizing in oil instantly makes the whole house feel cozy. This recipe is simple, forgiving, and perfect for everyday cooking.

  • Turmeric powder– 1 tsp  
  • Black pepper – 1 tsp
  • Tomato sauce – 1 tbsp
  • Soy sauce – 1 tsp
  • Cinnamon stick and 2 cloves
  • Salt – to taste

👩‍🍳Recipe Steps

1. Prepare the rice
If you’re using freshly cooked rice, let it cool slightly. Onion rice works best with rice that is not too soft or sticky. 
Leftover rice from the fridge is perfect.


2. Heat the pan
Heat oil in a wide pan over medium heat. Once warm, add the sliced onions. Add chopped garlic, c
innamon stick and cloves. Mix and fry.


3. Cook the onions slowly
Add the sliced onions and stir the onions gently and let them cook until soft and lightly golden. Don’t rush this step. Slow cooking brings out the natural sweetness of the onions. This is my favorite part—the kitchen smells amazing at this stage.


4. Add the Eggs and spices
Add the turmeric powder, chili flakes and curry leaves. Mix and add eggs and b
